For the Muffins
  • 1/2 pound bulk pork sausage
  • 12 large eggs
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 cup shredded cheddar cheese

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the pork sausage over medium heat until it is no longer pink. Break the sausage into crumbles as it cooks. Drain off any excess fat.
  3. In a large bowl, beat the eggs. Add the chopped onion, green pepper, salt, garlic powder, and pepper to the eggs. Stir in the cooked sausage and shredded cheddar cheese.
  4. Spoon the mixture by 1/3 cupfuls into 12 greased muffin cups. Bake until a knife inserted into the center of a muffin comes out clean, which should take 20-25 minutes.
