- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the pork sausage over medium heat until it is no longer pink. Break the sausage into crumbles as it cooks. Drain off any excess fat.
- In a large bowl, beat the eggs. Add the chopped onion, green pepper, salt, garlic powder, and pepper to the eggs. Stir in the cooked sausage and shredded cheddar cheese.
- Spoon the mixture by 1/3 cupfuls into 12 greased muffin cups. Bake until a knife inserted into the center of a muffin comes out clean, which should take 20-25 minutes.
