- Preheat your air fryer to 375°F (190°C).
- In a large skillet over medium-high heat, cook the ground beef until browned. Drain off any excess grease.
- Add the diced onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic, cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Cook for another 2-3 minutes until heated through.
- Stuff the mixture evenly into the prepared bell peppers.
- Place the stuffed peppers in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
- Air fry for 15-20 minutes, or until the peppers are tender and the filling is heated through. If you like your peppers slightly charred, you can increase the time by a few minutes.
- Top with shredded cheese during the last 2-3 minutes of cooking, or until melted.
- Serve hot.
Notes
For a vegetarian option, omit the ground beef and add more vegetables like corn, black beans, or zucchini to the filling.
