Air Fryer Stuffed Peppers

These air fryer stuffed peppers are a quick and easy weeknight meal. They are filled with a savory mixture of ground meat, rice, and vegetables, and cooked until tender and slightly charred.

Ingredients
  

For the Peppers
  • 4 bell peppers any color, tops removed and seeded
For the Filling
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper from the tops you cut off
  • 1 clove garlic minced
  • 1/2 cup tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese cheddar or mozzarella

  • Air fryer
  • Large skillet
  • Mixing bowl

Method
 

  1. Preheat your air fryer to 375°F (190°C).
  2. In a large skillet over medium-high heat, cook the ground beef until browned. Drain off any excess grease.
  3. Add the diced onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Stir in the minced garlic, cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Cook for another 2-3 minutes until heated through.
  5. Stuff the mixture evenly into the prepared bell peppers.
  6. Place the stuffed peppers in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
  7. Air fry for 15-20 minutes, or until the peppers are tender and the filling is heated through. If you like your peppers slightly charred, you can increase the time by a few minutes.
  8. Top with shredded cheese during the last 2-3 minutes of cooking, or until melted.
  9. Serve hot.

Notes

For a vegetarian option, omit the ground beef and add more vegetables like corn, black beans, or zucchini to the filling.
