Apple Cinnamon Baked Oatmeal

Ingredients
  

For the Oatmeal
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 cups milk dairy or non-dairy
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple peeled, cored, and diced

Method
 

  1. Preheat your oven to 375°F (190°C). Grease an 8x8 inch baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the milk, maple syrup, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apple.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 30-35 minutes, or until the oatmeal is set and the top is lightly golden.
  7. Let cool slightly before serving. You can serve it warm on its own or with your favorite toppings like fresh fruit, nuts, or a drizzle of extra maple syrup.

Notes

This baked oatmeal can be made ahead of time and reheated. Store leftovers in an airtight container in the refrigerator for up to 3 days.
