Method
- Combine oats, mashed bananas, eggs, milk, baking powder, cinnamon, and optional maple syrup in a blender.
- Blend until smooth. The batter will be thick.
- Heat oil in a griddle or frying pan over medium heat.
- Pour about 1/4 cup of batter for each pancake onto the hot griddle.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve immediately with your favorite toppings.
Notes
You can add a splash more milk if the batter is too thick for your liking. Toppings can include fresh fruit, yogurt, or more maple syrup.
