Ingredients
  

Pancakes
  • 1 cup rolled oats
  • 2 ripe bananas mashed
  • 2 large eggs
  • 1/2 cup milk or dairy-free alternative
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 tbsp maple syrup optional
  • 1 tbsp oil for cooking

Equipment

  • Blender
  • Griddle or Frying Pan
  • Spatula

Method
 

  1. Combine oats, mashed bananas, eggs, milk, baking powder, cinnamon, and optional maple syrup in a blender.
  2. Blend until smooth. The batter will be thick.
  3. Heat oil in a griddle or frying pan over medium heat.
  4. Pour about 1/4 cup of batter for each pancake onto the hot griddle.
  5. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  6. Serve immediately with your favorite toppings.

Notes

You can add a splash more milk if the batter is too thick for your liking. Toppings can include fresh fruit, yogurt, or more maple syrup.
