Berry French Toast Bake

Ingredients
  

For the French Toast Bake
  • 8 slices bread stale or day-old, cut into 1-inch cubes
  • 2 cups milk whole or 2%
  • 4 large eggs
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1.5 cups mixed berries fresh or frozen
Optional Toppings
  • powdered sugar for dusting
  • maple syrup for serving

Equipment

  • 9x13-inch baking dish
  • Large bowl
  • Whisk

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. Spread the bread cubes evenly in the prepared baking dish.
  3. In a large bowl, whisk together the milk, eggs, granulated sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Pour the egg mixture evenly over the bread cubes in the baking dish.
  5. Scatter the mixed berries over the top of the bread mixture.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove the foil and bake for another 15-20 minutes, or until the French toast is golden brown and set in the center.
  8. Let it cool slightly before serving. Dust with powdered sugar and serve with maple syrup, if desired.

Notes

For best results, use slightly stale bread as it will absorb the custard mixture better without becoming too mushy. If using frozen berries, do not thaw them before adding to the bake.
