Ingredients

For the Clusters
  • 1 cup Greek yogurt
  • 2 scoops Whey protein isolate optional, any flavor or sweetener
  • 1 cup Strawberries chopped into small chunks
For the Chocolate Coating
  • 1 cup Sugar-free dark chocolate chips melted (150-170g per cup)
  • 1 tbsp Coconut oil optional, to thin the chocolate

Equipment

  • bowl
  • Tray
  • Parchment paper

Method

  1. In a bowl, combine Greek yogurt and protein powder (if using). Stir until smooth.
  2. Gently fold in the chopped strawberries, making sure they are evenly coated.
  3. Line a tray with parchment paper. Drop spoonfuls of the mixture onto the tray, keeping them chunky.
  4. Place the tray in the freezer for 2-3 hours until the clusters are firm.
  5. Melt the dark chocolate with coconut oil (if using). Once the clusters are frozen, dip each one into the chocolate or drizzle generously over the top.
  6. Place back in the freezer for 10–15 minutes until the chocolate sets. Eat straight from the freezer.

Notes

You can use your favorite yogurt. Flavored whey protein isolate can add flavor and sweetness. Adjust sweetener to your preference, using a syrup or powdered form for a smooth texture. Fresh or frozen berries work; frozen berries are harder to chop. You can substitute berries with low-carb nuts or seeds. Different chocolate brands will alter the nutritional information. Adding a tablespoon of oil thins the chocolate. Mix-ins like pistachios, other nuts, coconut, or seeds can be added. Store in an airtight container in the freezer for up to 2 weeks. Let them sit for a couple of minutes before eating if they are too firm.
