- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a mixing bowl, combine the cottage cheese, rolled oats, brown sugar, flour, baking soda, and vanilla extract. Mix until everything is well combined.
- Gently fold in the chocolate chips, raisins, or nuts if you are using them.
- Scoop the dough into large spoonfuls onto the prepared baking sheets. Space them about 2 inches apart, as they will spread slightly during baking.
- Bake for 10 to 12 minutes, or until the edges of the cookies are lightly golden. Let the cookies cool on the baking sheet for a few minutes before carefully transferring them to a wire rack to cool completely.

Store these cookies in an airtight container at room temperature for up to 3 days. For longer storage, keep them in the refrigerator for about a week, or in a freezer-safe bag in the freezer for up to 3 months. Thaw on the counter before serving.
You can use either dark or light brown sugar. Dark brown sugar will give the cookies a slightly deeper flavor.
