Ingredients
  

For the Chicken Stew
  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Dumplings
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 tablespoons butter, melted

Method
 

  1. Place chicken breasts, carrots, celery, onion, chicken broth, thyme, salt, and pepper in the slow cooker. Cover and cook on low for 4 hours or on high for 2 hours, until chicken is cooked through.
  2. Remove chicken from the slow cooker and shred it with two forks. Return shredded chicken to the slow cooker.
  3. In a medium bowl, whisk together flour, baking powder, and salt for the dumplings. Stir in milk and melted butter until just combined. Do not overmix.
  4. Bring the stew to a simmer over medium heat on the stovetop. Drop spoonfuls of dumpling batter onto the simmering stew. Cover and cook for 15-20 minutes, or until dumplings are cooked through.

Notes

You can add a splash of heavy cream at the end for a richer stew. Garnish with fresh parsley if desired.
