- Place chicken breasts, carrots, celery, onion, chicken broth, thyme, salt, and pepper in the slow cooker. Cover and cook on low for 4 hours or on high for 2 hours, until chicken is cooked through.
- Remove chicken from the slow cooker and shred it with two forks. Return shredded chicken to the slow cooker.
- In a medium bowl, whisk together flour, baking powder, and salt for the dumplings. Stir in milk and melted butter until just combined. Do not overmix.
- Bring the stew to a simmer over medium heat on the stovetop. Drop spoonfuls of dumpling batter onto the simmering stew. Cover and cook for 15-20 minutes, or until dumplings are cooked through.
Notes
You can add a splash of heavy cream at the end for a richer stew. Garnish with fresh parsley if desired.
