Easy BBQ Chicken Bowls

Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 1/2 cup BBQ sauce plus more for serving
For the Bowls
  • 2 cups cooked rice
  • 1 can black beans rinsed and drained
  • 1 cup corn kernels fresh or frozen
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

  • Small saucepan

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small saucepan over medium heat, combine the chicken pieces and BBQ sauce. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and coated in sauce.
  3. Assemble the bowls: Divide the cooked rice among four bowls. Top with the BBQ chicken, black beans, and corn.
  4. Sprinkle with shredded cheddar cheese and chopped cilantro. Serve immediately with extra BBQ sauce if desired.

Notes

You can use leftover cooked chicken or rotisserie chicken to make this recipe even faster. Other toppings like diced avocado or a drizzle of ranch dressing are also good options.
