- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small saucepan over medium heat, combine the chicken pieces and BBQ sauce. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and coated in sauce.
- Assemble the bowls: Divide the cooked rice among four bowls. Top with the BBQ chicken, black beans, and corn.
- Sprinkle with shredded cheddar cheese and chopped cilantro. Serve immediately with extra BBQ sauce if desired.
Notes
You can use leftover cooked chicken or rotisserie chicken to make this recipe even faster. Other toppings like diced avocado or a drizzle of ranch dressing are also good options.
