- In a large skillet, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the diced tomatoes (with juice), rinsed kidney beans, taco seasoning, and water. Stir to combine.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 minutes, stirring occasionally.
- Uncover and sprinkle the shredded cheddar cheese over the top. Cover again and let the cheese melt, about 2-3 minutes.
- Serve hot with your favorite toppings.
