Easy Beef Taco Skillet

A quick and easy one-pan meal perfect for busy weeknights. This beef taco skillet is packed with flavor and is a family favorite.

Ingredients
  

For the Skillet
  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1 can kidney beans 15 oz, rinsed and drained
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar cheese

  • sour cream
  • salsa
  • chopped cilantro

Method
 

  1. In a large skillet, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the diced tomatoes (with juice), rinsed kidney beans, taco seasoning, and water. Stir to combine.
  5. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 minutes, stirring occasionally.
  6. Uncover and sprinkle the shredded cheddar cheese over the top. Cover again and let the cheese melt, about 2-3 minutes.
  7. Serve hot with your favorite toppings.

Notes

This skillet meal is versatile. Feel free to add other vegetables like bell peppers or corn. Serve with tortillas, rice, or enjoy it on its own.
