Method
- Toast the english muffin halves.
- Heat olive oil or butter in a skillet over medium heat. Add the ham slices and cook for 1-2 minutes per side until heated through.
- Crack the eggs into the skillet. Cook to your desired doneness. Season with salt and pepper.
- Place the cooked eggs and ham onto one half of the toasted english muffin.
- Top with shredded cheese and chopped chives. Place the other english muffin half on top.
- Serve immediately.
Notes
To make 2 sandwiches at a time, toast the English muffins in the toaster and sauté two sets of eggs in the pan.
