Easy Breakfast Sandwich

This breakfast sandwich is cheesy, juicy, easy, and delicious! All you need is 5 minutes and 5 ingredients. A one-pan breakfast sandwich recipe.

Ingredients
  

For the Sandwich
  • 1 english muffin cut in half
  • 2 eggs
  • 2-4 slices ham any kind will do
  • 1/3 cup finely shredded cheese Mexican cheese used
  • 1 tsp chives finely chopped
  • to taste salt
  • to taste pepper
  • 1 Tbsp olive oil or butter to saute

Equipment

  • Skillet
  • Toaster

Method
 

  1. Toast the english muffin halves.
  2. Heat olive oil or butter in a skillet over medium heat. Add the ham slices and cook for 1-2 minutes per side until heated through.
  3. Crack the eggs into the skillet. Cook to your desired doneness. Season with salt and pepper.
  4. Place the cooked eggs and ham onto one half of the toasted english muffin.
  5. Top with shredded cheese and chopped chives. Place the other english muffin half on top.
  6. Serve immediately.

Notes

To make 2 sandwiches at a time, toast the English muffins in the toaster and sauté two sets of eggs in the pan.
