Easy Spinach Artichoke Pasta

Ingredients
  

Pasta
  • 12 oz Penne pasta
Sauce
  • 1 tbsp Olive oil
  • 2 cloves Garlic minced
  • 1 can Artichoke hearts 14 oz, drained and chopped
  • 5 oz Fresh spinach
  • 1.5 cup Heavy cream
  • 1 cup Parmesan cheese grated
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Equipment

  • Large pot
  • Colander
  • Large skillet

Method
 

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Add chopped artichoke hearts to the skillet and cook for 2-3 minutes.
  4. Stir in heavy cream, salt, and pepper. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally.
  5. Add spinach to the skillet and stir until wilted, about 2 minutes.
  6. Stir in grated Parmesan cheese until melted and the sauce is smooth.
  7. Add the cooked pasta to the skillet with the sauce. Toss to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  8. Serve immediately.

Notes

You can add cooked chicken or shrimp for a more substantial meal.
