Method
- Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Add chopped artichoke hearts to the skillet and cook for 2-3 minutes.
- Stir in heavy cream, salt, and pepper. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally.
- Add spinach to the skillet and stir until wilted, about 2 minutes.
- Stir in grated Parmesan cheese until melted and the sauce is smooth.
- Add the cooked pasta to the skillet with the sauce. Toss to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Serve immediately.
Notes
You can add cooked chicken or shrimp for a more substantial meal.
