Ingredients

For the Layers
  • 1 pound angel food cake cut into 1-inch cubes
  • 1 pint strawberries hulled and sliced
  • 1 pint blueberries rinsed and drained
For the Cream Filling
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream

Equipment

  • Mixing bowls
  • Whisk
  • Spatula

Method

  1. In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
  2. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  3. In a large glass bowl, layer the ingredients. Start with a layer of cubed angel food cake.
  4. Top the cake with a layer of sliced strawberries.
  5. Spread a layer of the cream filling over the strawberries.
  6. Repeat the layers: cake, blueberries, cream filling.
  7. Finish with a final layer of cream filling. Decorate the top with remaining berries.
  8. Cover and refrigerate for at least 30 minutes before serving.

Notes

You can substitute pound cake or sponge cake for the angel food cake. For a deeper flavor, you can macerate the berries in a little sugar for 15-20 minutes before layering.
