Method
- Cook the sausage in a large skillet over medium-high heat until browned and cooked through. Drain off any excess grease.
- While the sausage cooks, whisk the eggs and milk together in a large bowl. Season with salt and pepper.
- Pour the egg mixture into the skillet with the sausage. Cook, stirring occasionally, until the eggs are set.
- Stir in the shredded cheese until melted.
- Warm the tortillas slightly to make them pliable. You can do this in a dry skillet or microwave them for a few seconds.
- Spoon about 1/4 of the sausage and egg mixture onto the center of each tortilla. Fold in the sides, then roll up tightly to form a burrito.
- Place the burritos seam-side down on a baking sheet. You can serve them immediately or wrap them individually in plastic wrap and then in foil for freezing.
- To reheat, remove the foil and plastic wrap. Wrap in a paper towel and microwave for 1-2 minutes, or until heated through. You can also reheat them in a 350°F (175°C) oven for about 20-25 minutes.
Notes
You can add other ingredients like diced onions, peppers, or potatoes to the filling before cooking the eggs. For a spicier burrito, add a pinch of red pepper flakes to the sausage mixture.
