Freezer Sausage Breakfast Burritos

Make ahead breakfast burritos filled with sausage, eggs, and cheese. Perfect for busy mornings.

Ingredients
  

For the Burritos
  • 1 lb Pork sausage casings removed
  • 8 Large eggs
  • 1/4 cup Milk
  • 1 cup Shredded cheddar cheese
  • 8 Large flour tortillas 10-inch

  • Large skillet
  • Baking sheet
  • Large bowl

Method
 

  1. Cook the sausage in a large skillet over medium-high heat until browned and cooked through. Drain off any excess grease.
  2. While the sausage cooks, whisk the eggs and milk together in a large bowl. Season with salt and pepper.
  3. Pour the egg mixture into the skillet with the sausage. Cook, stirring occasionally, until the eggs are set.
  4. Stir in the shredded cheese until melted.
  5. Warm the tortillas slightly to make them pliable. You can do this in a dry skillet or microwave them for a few seconds.
  6. Spoon about 1/4 of the sausage and egg mixture onto the center of each tortilla. Fold in the sides, then roll up tightly to form a burrito.
  7. Place the burritos seam-side down on a baking sheet. You can serve them immediately or wrap them individually in plastic wrap and then in foil for freezing.
  8. To reheat, remove the foil and plastic wrap. Wrap in a paper towel and microwave for 1-2 minutes, or until heated through. You can also reheat them in a 350°F (175°C) oven for about 20-25 minutes.

Notes

You can add other ingredients like diced onions, peppers, or potatoes to the filling before cooking the eggs. For a spicier burrito, add a pinch of red pepper flakes to the sausage mixture.
