Fresh Peach Salsa with Cinnamon Chips

Ingredients
  

For the Cinnamon Chips
  • 6 medium flour tortillas
  • 2 tablespoons melted butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
For the Peach Salsa
  • 3 cups fresh peaches peeled, pitted, and diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice fresh
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Cut each tortilla into 8 wedges. Arrange the wedges in a single layer on a baking sheet.
  3. In a small bowl, whisk together the melted butter, sugar, and cinnamon.
  4. Brush the butter mixture evenly over the tortilla wedges.
  5. Bake for 8-10 minutes, or until golden brown and crispy. Let cool on the baking sheet.
  6. While the chips are baking, prepare the salsa. In a large bowl, combine the diced peaches, chopped red onion, chopped cilantro, minced jalapeno, lime juice, and salt.
  7. Gently stir to combine all ingredients.
  8. Serve the peach salsa with the cooled cinnamon chips.

Notes

You can adjust the amount of jalapeno to control the spice level. If fresh peaches are not in season, you can use frozen peaches, thawed and drained.
