  • 4 tablespoon unsalted butter, softened
  • 1 tablespoon mayonnaise
  • 3 cloves garlic, very finely minced
  • 1 tablespoon Italian parsley, finely chopped
  • 1 pinch salt to taste
  • 1 pinch pepper to taste
For the Grilled Cheese
  • 4 slices sandwich bread sourdough recommended
  • 1 cup shredded cheese Gruyere, Colby Jack, and smoked Cheddar blend recommended

Method
 

  1. In a bowl, mix the softened butter, mayonnaise, minced garlic, and chopped parsley until evenly combined. Season with salt and pepper to taste.
  2. Spread the garlic butter mixture on one side of each slice of bread. Top two slices with the shredded cheese and cover with the remaining bread slices, buttered side up.
  3. Heat a non-stick skillet over medium-low heat. Cooking on medium-low heat allows the cheese to melt completely before the bread burns.
  4. Place the sandwiches in the warm skillet. Cook for about 5 minutes per side, until the bread is golden brown and the cheese is fully melted. You may need to flip them a few times and gently press them down to ensure even cooking and melting.
  5. Slice the grilled cheese sandwiches and serve immediately while warm and melty.
