- Preheat your air fryer to 400°F (200°C).
- In a mixing bowl, toss the potato cubes with olive oil, garlic powder, salt, and pepper until evenly coated.
- Place the seasoned potatoes in the air fryer basket in a single layer. Cook for 12-15 minutes, shaking the basket halfway through, until the potatoes are tender and crispy.
- While the potatoes are cooking, combine the minced garlic, grated Parmesan cheese, and chopped parsley in a small bowl.
- Once the potatoes are cooked, transfer them to a serving bowl. Sprinkle the garlic Parmesan mixture over the hot potatoes and toss to combine.
- Serve immediately.
