Greek Chicken Bowls for Meal Prep

Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Bowls
  • 2 cups cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes halved
  • 1/2 cup kalamata olives pitted and halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
For the Tzatziki Sauce
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated cucumber squeezed dry
  • 1 clove garlic minced
  • 1 tsp lemon juice
  • 1 pinch salt

Method
 

  1. In a small bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add the chicken pieces and toss to coat. Let marinate for at least 10 minutes.
  2. Preheat your oven to 400°F (200°C). Spread the marinated chicken on a baking sheet.
  3. Bake for 15-20 minutes, or until the chicken is cooked through and no longer pink in the center.
  4. While the chicken bakes, prepare the tzatziki sauce. In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt. Stir well.
  5. To assemble the bowls, divide the cooked quinoa among four containers. Top with the baked chicken, chopped cucumber, cherry tomatoes, olives, and red onion.
  6. Garnish with fresh parsley and serve with tzatziki sauce on the side.

Notes

Store the components separately in the refrigerator if you are meal prepping for several days to keep ingredients fresh. Add the tzatziki sauce just before serving.
