- Preheat your grill to medium-high heat.
- Grill the peach halves for 3-4 minutes per side, until grill marks appear and peaches are slightly softened. Remove from grill and let cool for 5 minutes.
- While peaches cool, whisk together olive oil, honey, lemon juice, Dijon mustard, salt, and pepper in a small bowl until well combined.
- Slice the cooled grilled peaches.
- In a large bowl, combine mixed greens, toasted pecans, and crumbled feta cheese.
- Add the sliced grilled peaches to the salad.
- Drizzle the honey dressing over the salad and toss gently to combine.
- Serve immediately.
Notes
You can substitute walnuts for pecans or goat cheese for feta if desired. Add grilled chicken or shrimp for a more substantial meal.
