- Preheat your grill to medium-high heat.
- Thread the watermelon and halloumi cubes alternately onto the skewers.
- Brush the skewers with olive oil and season with black pepper.
- Grill the skewers for 2-3 minutes per side, until the halloumi is golden brown and the watermelon is slightly softened.
- Remove from grill, sprinkle with fresh mint, and serve immediately.
