Ingredients
  

For the Skewers
  • 1 medium watermelon cut into 1-inch cubes
  • 8 oz halloumi cheese cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp fresh mint chopped
  • 1/2 tsp black pepper freshly ground

Method
 

  1. Preheat your grill to medium-high heat.
  2. Thread the watermelon and halloumi cubes alternately onto the skewers.
  3. Brush the skewers with olive oil and season with black pepper.
  4. Grill the skewers for 2-3 minutes per side, until the halloumi is golden brown and the watermelon is slightly softened.
  5. Remove from grill, sprinkle with fresh mint, and serve immediately.

Notes

You can add other vegetables like red onion or bell peppers to the skewers for extra flavor and color.
