Method
- In a large bowl, mix together almond flour, oil, maple syrup and vanilla until smooth.
- Fold in half of the chocolate chips.
- Line a baking sheet with parchment paper and add cookie dough on top to spread across and form to make the bark. Use clean hands for this step.
- Add the bark to the freezer for about 5 to 10 minutes.
- While the bark chills, melt the remaining chocolate chips in the microwave.
- Pour melted chocolate across the bark then set back in the freezer for at least an hour.
- Remove from freezer, cut into pieces and enjoy!
Notes
Store leftovers in the freezer for up to 2 months. Let the bark thaw for a few minutes before eating.
