Ingredients
  

For the Bark
  • 1 1/2 cup almond flour
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cup chocolate chips, divided

Equipment

  • Large bowl
  • Baking sheet
  • Parchment paper
  • Microwave

Method
 

  1. In a large bowl, mix together almond flour, oil, maple syrup and vanilla until smooth.
  2. Fold in half of the chocolate chips.
  3. Line a baking sheet with parchment paper and add cookie dough on top to spread across and form to make the bark. Use clean hands for this step.
  4. Add the bark to the freezer for about 5 to 10 minutes.
  5. While the bark chills, melt the remaining chocolate chips in the microwave.
  6. Pour melted chocolate across the bark then set back in the freezer for at least an hour.
  7. Remove from freezer, cut into pieces and enjoy!

Notes

Store leftovers in the freezer for up to 2 months. Let the bark thaw for a few minutes before eating.
