Juicy Garlic Parmesan Chicken Meatloaf

Ingredients
  

For the Meatloaf
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg
  • 2 tablespoons milk
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Glaze
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking pan.
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, egg, milk, Italian seasoning, salt, and pepper. Mix gently until just combined. Do not overmix.
  3. Shape the mixture into a loaf and place it in the prepared baking pan.
  4. In a small bowl, whisk together the ketchup, brown sugar, and Worcestershire sauce for the glaze.
  5. Spread the glaze evenly over the top of the meatloaf.
  6. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C) and the glaze is caramelized.
  7. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

You can add finely chopped onion or bell pepper to the meatloaf mixture for extra flavor and texture.
