Method
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- To make the crust, cream together the softened butter and 1/2 cup granulated sugar. Beat in the flour until combined.
- Press the crust mixture evenly into the bottom of the prepared baking pan.
- Bake the crust for 15-20 minutes, or until lightly golden.
- While the crust bakes, prepare the lemon filling. In a medium bowl, whisk together the eggs and 1 1/2 cups granulated sugar.
- Whisk in the 1/4 cup flour until smooth. Stir in the lemon juice and lemon zest.
- Pour the lemon filling over the hot crust. Return the pan to the oven and bake for another 15-20 minutes, or until the filling is set.
- Let the bars cool completely in the pan on a wire rack. Once cooled, dust with powdered sugar.
- Cut into bars and serve.

Store lemon bars in an airtight container in the refrigerator for up to 3 days.
