One Pan Lemon Chicken

This recipe makes lemon chicken simple and easy for a weeknight dinner. It cooks all in one pan.

Ingredients
  

For the Chicken
  • 1.5 lbs boneless, skinless chicken thighs cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
For the Sauce
  • 0.5 cup chicken broth
  • 0.25 cup lemon juice from about 1-2 lemons
  • 2 cloves garlic minced
  • 1 tbsp honey
  • 1 tsp dried oregano
For Serving
  • 0.25 cup fresh parsley chopped
  • 1 lemon sliced for garnish

  • Large oven-safe skillet

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, toss the chicken pieces with olive oil, salt, and pepper.
  3. Arrange the chicken in a single layer in the skillet.
  4. In a small bowl, whisk together the chicken broth, lemon juice, minced garlic, honey, and dried oregano.
  5. Pour the sauce over the chicken in the skillet.
  6. Place the skillet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. Remove from the oven. Garnish with chopped fresh parsley and lemon slices before serving.

Notes

You can serve this lemon chicken with rice, pasta, or a side salad.
