One Pot Taco Pasta

This one-pot taco pasta is a quick and easy weeknight meal. It combines pasta, seasoned ground beef, and taco flavors in a single pot for minimal cleanup.

Ingredients
  

For the Pasta
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning 1 ounce
  • 15 ounces diced tomatoes undrained
  • 4 cups beef broth
  • 12 ounces pasta such as rotini or penne
  • 1.5 cups shredded cheese cheddar or Mexican blend

Method
 

  1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the taco seasoning, diced tomatoes (with their juice), and beef broth. Bring the mixture to a boil.
  4. Add the pasta to the boiling liquid. Reduce the heat to medium-low, cover, and simmer for 15-20 minutes, or until the pasta is cooked al dente and most of the liquid has been absorbed, stirring occasionally.
  5. Remove the pot from the heat. Stir in the shredded cheese until melted and combined.
  6. Serve hot.

Notes

You can customize this dish with your favorite taco toppings, such as sour cream, salsa, chopped cilantro, or sliced jalapeños.
