Ingredients
  

Chicken Pasta
  • 1.5 pounds boneless skinless chicken cut into 1-inch pieces
  • 10 ounces penne pasta
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 tablespoon olive oil
Sauce
  • 3 tablespoons butter
  • 2 teaspoons garlic minced
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 1 cup sun-dried tomatoes drained
  • 1 teaspoon paprika
  • 2 teaspoons dried Italian seasoning
  • 1 bunch fresh basil for garnish

Method
 

  1. Cook the penne pasta according to package instructions. Drain the pasta and set it aside.
  2. Cut the chicken into 1-inch pieces and season with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes until cooked through.
  4. Remove the chicken from the skillet and set it aside.
  5. Melt butter in the same skillet. Add minced garlic and cook for 30 seconds until fragrant. Stir in flour to make a paste.
  6. Whisk in chicken broth, heavy cream, and parmesan cheese.
  7. Stir in sun-dried tomatoes, paprika, and Italian seasoning. Season with additional salt and pepper if needed.
  8. Simmer the sauce for a few minutes until it thickens.
  9. Return the chicken to the skillet along with the cooked pasta. Stir to coat everything in the sauce.
  10. Garnish with fresh basil and additional parmesan cheese.

Notes
