Ingredients

For the Filling
  • 6 cups peeled, sliced peaches fresh or frozen
  • 1/2 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon lemon juice
  • 1/2 teaspoon cinnamon
For the Topping
  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter cold, cut into cubes
  • 1/4 cup milk

Equipment

  • 9x13-inch baking dish
  • Mixing bowls
  • Whisk
  • Spatula

Method

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced peaches, 1/2 cup brown sugar, 2 tablespoons flour, lemon juice, and cinnamon. Toss to coat the peaches evenly.
  3. Pour the peach mixture into the 9x13 inch baking dish.
  4. In a separate bowl, whisk together 1 cup flour and 1 cup brown sugar.
  5. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  6. Stir in the milk until just combined. The topping will be thick.
  7. Drop spoonfuls of the topping over the peach mixture in the baking dish.
  8. Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let cool slightly before serving. Serve warm, perhaps with a scoop of vanilla ice cream.

Notes

You can adjust the amount of brown sugar in the filling based on the sweetness of your peaches. For a richer flavor, you can add a pinch of nutmeg to the topping.
