Ingredients
  

For the Salad
  • 2 balls burrata cheese room temperature
  • 3 ripe peaches pitted and sliced
  • 1/2 cup fresh basil leaves torn
  • 1/4 cup toasted pine nuts
For the Dressing
  • 3 tbsp olive oil extra virgin
  • 1 tbsp balsamic glaze
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper freshly ground

  • Small bowl

Method
 

  1. Arrange the sliced peaches and burrata balls on a large platter.
  2. Scatter the torn basil leaves and toasted pine nuts over the peaches and burrata.
  3. In a small bowl, whisk together the olive oil, balsamic glaze, honey, salt, and pepper to make the dressing.
  4. Drizzle the dressing evenly over the salad.
  5. Chill for 10 minutes before serving to allow flavors to meld.

Notes

You can substitute nectarines or plums for peaches if desired. For a touch of spice, add a pinch of red pepper flakes to the dressing.
