- Preheat your oven to 375°F (190°C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, combine the flour, rolled oats, brown sugar, and salt for the crust and topping. Pour in the melted butter and mix until well combined and crumbly.
- Press about two-thirds of the oat mixture evenly into the bottom of the prepared baking pan to form the crust.
- In a separate bowl, gently toss the peaches with granulated sugar, cornstarch, lemon juice, and cinnamon for the filling.
- Spread the peach filling evenly over the crust.
- Sprinkle the remaining oat mixture evenly over the peach filling to create the topping.
- Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
- Let the bars cool completely in the pan before cutting into 12 bars.
Notes
You can use fresh or frozen peaches. If using frozen, do not thaw them before using.
