Ingredients
  

For the Crust and Topping
  • 1.5 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup packed brown sugar
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter melted
For the Peach Filling
  • 4 cups fresh or frozen peaches sliced
  • 0.25 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 0.5 teaspoon cinnamon

Method
 

  1. Preheat your oven to 375°F (190°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, combine the flour, rolled oats, brown sugar, and salt for the crust and topping. Pour in the melted butter and mix until well combined and crumbly.
  3. Press about two-thirds of the oat mixture evenly into the bottom of the prepared baking pan to form the crust.
  4. In a separate bowl, gently toss the peaches with granulated sugar, cornstarch, lemon juice, and cinnamon for the filling.
  5. Spread the peach filling evenly over the crust.
  6. Sprinkle the remaining oat mixture evenly over the peach filling to create the topping.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let the bars cool completely in the pan before cutting into 12 bars.

Notes

You can use fresh or frozen peaches. If using frozen, do not thaw them before using.
