Pesto Orzo

Ingredients
  

  • 1 pound Orzo pasta
  • 1 cup Fresh basil pesto
  • 1/2 cup Parmesan cheese grated
  • 1/4 cup Pine nuts toasted
  • 2 tablespoons Olive oil
  • 1 clove Garlic minced
  • Salt to taste
  • Black pepper to taste

Equipment

  • Large pot
  • Colander
  • Large bowl

Method
 

  1. Cook orzo pasta according to package directions in a large pot of salted boiling water. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked orzo, basil pesto, grated Parmesan cheese, toasted pine nuts, olive oil, and minced garlic.
  3. Toss everything together until well combined. Season with salt and black pepper to taste.
  4. Serve immediately.

Notes

For a creamier texture, you can add a tablespoon or two of heavy cream. You can also add cherry tomatoes or grilled chicken for extra flavor and protein.
