Quick Cajun Chicken Alfredo

A fast and flavorful Cajun-spiced chicken served over creamy Alfredo pasta.

Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts chicken breasts cut into 1-inch pieces
  • 1 tablespoon Cajun seasoning adjust to taste
  • 1 tablespoon olive oil
For the Alfredo Sauce
  • 8 ounces fettuccine pasta
  • 1/2 cup butter
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper freshly ground
  • 1/4 teaspoon salt to taste

  • Pot

Method
 

  1. Cook fettuccine according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, season chicken pieces with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  5. Pour in heavy cream and bring to a simmer. Stir in grated Parmesan cheese until melted and sauce is smooth. Season with salt and pepper.
  6. Add cooked fettuccine and cooked chicken to the skillet with the sauce. Toss to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  7. Serve immediately.

Notes

For extra spice, add a pinch of cayenne pepper to the sauce. You can also add cooked shrimp or sliced bell peppers to this dish.
