- Heat olive oil in a large skillet over low heat. Add chopped onion and cook until soft, if using.
- Add the sausage meat to the skillet and fry until cooked through. Drain off any excess fat if desired.
- Stir in the tomato paste and beef stock. Season with salt and pepper. Simmer over low heat for about 10 minutes.
- Add the light cream to the sauce and stir until combined. Do not boil after adding cream.
- While the sauce simmers, cook the pasta in a pot of salted boiling water according to package directions. Drain the pasta.
- Combine the drained pasta with the prepared sauce. Stir well to coat.
- Serve immediately, topped with grated Parmesan cheese if desired.
