- In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.
- Add the sliced bell peppers and onion to the skillet. Cook, stirring occasionally, until they begin to soften, about 5-7 minutes.
- Add the minced garlic and dried oregano to the skillet. Cook for 1 minute more until fragrant.
- Return the cooked sausage to the skillet. If using, add the chicken broth and crushed tomatoes. Stir everything together.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the peppers and onions are tender and the flavors have melded.
- Season with salt and black pepper to taste. Serve hot.
Notes
This dish is delicious served on its own, over pasta, or in a hoagie roll. You can adjust the spice level by using hot Italian sausage or adding red pepper flakes.
