Sausage and Peppers Comfort Food

Ingredients
  

For the Sausage and Peppers
  • 1 lb Italian sausage sweet or hot, casings removed
  • 2 Bell peppers any color, sliced
  • 1 large Onion sliced
  • 2 cloves Garlic minced
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Dried oregano
Optional additions
  • 1/4 cup Chicken broth
  • 1/4 cup Crushed tomatoes

Method
 

  1. In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.
  2. Add the sliced bell peppers and onion to the skillet. Cook, stirring occasionally, until they begin to soften, about 5-7 minutes.
  3. Add the minced garlic and dried oregano to the skillet. Cook for 1 minute more until fragrant.
  4. Return the cooked sausage to the skillet. If using, add the chicken broth and crushed tomatoes. Stir everything together.
  5. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the peppers and onions are tender and the flavors have melded.
  6. Season with salt and black pepper to taste. Serve hot.

Notes

This dish is delicious served on its own, over pasta, or in a hoagie roll. You can adjust the spice level by using hot Italian sausage or adding red pepper flakes.
