Ingredients

For the Beef
  • 3 lb beef chuck roast trimmed of excess fat
  • 1 packet au jus gravy mix
  • 1 packet dry onion soup mix
  • 1 cup water
For Assembly
  • 6 hoagie rolls split lengthwise
  • 1 cup beef broth for dipping
  • 1/2 cup mayonnaise optional
  • 1/2 cup provolone cheese slices optional

Equipment

  • Slow Cooker
  • Tongs
  • Forks
  • Cutting board
  • Knife

Method

  1. Place the beef roast in your slow cooker.
  2. In a bowl, whisk together the au jus gravy mix, dry onion soup mix, and water. Pour this mixture over the beef roast.
  3. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender and easily shreds.
  4. Remove the beef from the slow cooker and place it on a cutting board. Use two forks to shred the meat.
  5. Return the shredded beef to the slow cooker and stir it into the juices. Let it heat through for about 15 minutes.
  6. While the beef heats, prepare your rolls. You can lightly toast them if desired.
  7. To assemble, spoon the shredded beef mixture onto the bottom half of each roll. Add mayonnaise and provolone cheese if using.
  8. Serve immediately with a small bowl of beef broth for dipping.

Notes

For a richer flavor, you can add a splash of Worcestershire sauce to the slow cooker with the other liquids. If you don't have hoagie rolls, other sturdy rolls or French bread can be used.
