Ingredients
  

For the Beef and Potatoes
  • 2 pounds beef stew meat
  • 1.5 pounds baby potatoes cut in half if very thick
  • 1 packet onion soup mix
  • 1 teaspoon garlic powder
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon ground black pepper
  • 3 garlic cloves minced
  • 4 tablespoons butter
  • 0.5 cup water or beef broth
For the Last Hour
  • 1 pound green beans trimmed
  • 1 tablespoon butter optional, for green beans

Method
 

  1. Spray the bottom of your slow cooker with non-stick cooking spray.
  2. Add the beef and potatoes to the slow cooker.
  3. Season with onion soup mix, salt, pepper, garlic powder, and minced garlic.
  4. Add the butter and water or beef broth.
  5. Cook on high for 3-4 hours or on low for 6-8 hours, stirring occasionally.
  6. Add the green beans and optional extra butter in the last hour or two of cooking to prevent them from becoming too soft.

Notes

You can use frozen or canned green beans instead of fresh. Alternatively, serve the beans or another vegetable on the side. If your potatoes are large, cut them in half to ensure they cook evenly. Cooking times can vary based on your slow cooker's size and brand.
