Slow Cooker White Chicken Chili

Ingredients
  

For the Chili
  • 1.5 lb boneless, skinless chicken breasts
  • 1 can diced green chilies 4 oz
  • 1 can cannellini beans 15 oz, rinsed and drained
  • 1 can great northern beans 15 oz, rinsed and drained
  • 1 cup chicken broth
  • 1 packet taco seasoning
  • 1 tsp cumin
  • 0.5 tsp oregano
Optional Toppings
  • 1 shredded cheese
  • 1 sour cream
  • 1 chopped cilantro

Method
 

  1. Place chicken breasts in the slow cooker.
  2. Add diced green chilies, cannellini beans, great northern beans, chicken broth, taco seasoning, cumin, and oregano to the slow cooker.
  3. Stir to combine.
  4. Cover and cook on low for 4 hours or on high for 2 hours, or until chicken is cooked through.
  5. Remove chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and stir.
  6. Serve hot, topped with your favorite toppings.

Notes

You can adjust the amount of taco seasoning and cumin to your preference.
