Ingredients
  

For the Salad
  • 5 oz fresh spinach washed and dried
  • 1 cup fresh strawberries hulled and sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup pecans chopped and toasted
For the Dressing
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/2 tsp dijon mustard
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

  1. In a large bowl, combine the spinach, sliced strawberries, red onion, and toasted pecans.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Serve immediately.

Notes

You can substitute walnuts for pecans if desired. For a creamier salad, add crumbled feta or goat cheese.
