Method
- Preheat your grill to medium-high heat.
- Grill the corn, turning occasionally, until lightly charred and tender, about 8-10 minutes. Let cool slightly, then cut the kernels off the cobs.
- In a large bowl, combine the grilled corn, black beans, cherry tomatoes, red onion, and cilantro.
- To make the dressing, combine the avocado, lime juice, olive oil, garlic, salt, and pepper in a blender. Blend until smooth and creamy.
- Pour the dressing over the salad ingredients and toss to combine.
- Serve immediately.
Notes
For a spicier dressing, add a pinch of cayenne pepper. You can also add grilled chicken or shrimp for a more substantial meal.
