Ingredients
  

For the Salad
  • 4 ears Corn shucked
  • 1 can Black beans rinsed and drained
  • 1 pint Cherry tomatoes halved
  • 1 red Onion thinly sliced
  • 1 Cilantro chopped
For the Dressing
  • 1 Avocado ripe
  • 1/4 cup Lime juice fresh
  • 2 tablespoons Olive oil
  • 1 clove Garlic minced
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper

  • Blender
  • Large bowl

Method
 

  1. Preheat your grill to medium-high heat.
  2. Grill the corn, turning occasionally, until lightly charred and tender, about 8-10 minutes. Let cool slightly, then cut the kernels off the cobs.
  3. In a large bowl, combine the grilled corn, black beans, cherry tomatoes, red onion, and cilantro.
  4. To make the dressing, combine the avocado, lime juice, olive oil, garlic, salt, and pepper in a blender. Blend until smooth and creamy.
  5. Pour the dressing over the salad ingredients and toss to combine.
  6. Serve immediately.

Notes

For a spicier dressing, add a pinch of cayenne pepper. You can also add grilled chicken or shrimp for a more substantial meal.
