Sunny-Side Up Fried Eggs

Ingredients
  

  • 1 tablespoon Butter
  • 2 Eggs
  • Salt to taste
  • Black pepper to taste

  • Cast Iron Skillet
  • Glass lid

Method
 

  1. In a cast iron, carbon steel, or nonstick skillet, melt butter over medium heat until lightly foaming. Tilt the pan to distribute the butter evenly.
  2. Carefully break the eggs into the skillet. Season with salt.
  3. Cover with a glass lid and cook until the whites are just set, about 1 minute and 30 seconds.
  4. Remove the lid and continue to cook for another 1 minute and 30 seconds, or until the whites are completely set and the yolks are still runny.
  5. Transfer the eggs to a plate, season to taste with salt and pepper, and serve immediately.

Notes

This recipe is a foundation for many quick meals. You can add cheese, herbs, or serve with toast.
