Taco Tuesday Chicken Tacos

Ingredients
  

For the Tacos
  • 3 Tbsp. extra-virgin olive oil
  • 4 6- to 8-oz. boneless, skinless chicken breasts cut into 1" strips
  • 1 to taste Kosher salt
  • 1 to taste Freshly ground black pepper
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1/2 tsp. garlic powder
  • 1/4 tsp. cayenne
  • 1/4 tsp. paprika
For Serving
  • 8 corn tortillas warmed
  • 1 sour cream for serving
  • 1 red onion thinly sliced, for serving
  • 1 tomatoes finely chopped, for serving
  • 1 Monterey Jack cheese shredded, for serving
  • 1 avocados finely chopped, for serving
  • 1 fresh cilantro finely chopped, for serving
  • 1 lime wedges for serving

Method
 

  1. In a large skillet over medium heat, heat oil. Season chicken with salt and pepper.
  2. Cook chicken, stirring occasionally, until golden brown, about 6 minutes.
  3. Add chili powder, cumin, garlic powder, cayenne, and paprika. Cook, stirring and adding more oil if mixture is too dry, until coated, about 1 minute more.
  4. Divide chicken among tortillas, then top with desired toppings.

Notes

This recipe is great for meal prep. You can cook the chicken ahead of time and assemble the tacos when ready to serve.
