  • 4 large eggs freshest available
  • 2 tablespoons milk, plant milk, or water unsweetened almond milk recommended for plant milk
  • 1 tablespoon extra-virgin olive oil or butter for the pan
  • 1/4 teaspoon salt or to taste
  • 1/8 teaspoon black pepper or to taste

Method
 

  1. Crack the eggs into a bowl. Add the milk (or water), salt, and pepper. Whisk until well combined.
  2. Heat the olive oil or butter in a non-stick skillet over medium-low heat.
  3. Pour the egg mixture into the skillet. Let it cook undisturbed for about 30 seconds, or until the edges begin to set.
  4. Gently push the cooked eggs from the edges toward the center with a spatula, allowing the uncooked egg to flow underneath. Continue this process until the eggs are mostly set but still slightly moist.
  5. Remove the skillet from the heat. The residual heat will continue to cook the eggs. Serve immediately.
