Ingredients
  

For the Sandwich
  • 8 slices Sourdough bread
  • 6 tablespoons Butter, softened divided
  • 3 tablespoons Mayonnaise
For the Cheese Blend
  • 3 tablespoons Manchego cheese finely shredded
  • 1/8 teaspoon Onion powder
  • 4 ounces Brie cheese rind removed
  • 1/2 cup Sharp white cheddar cheese shredded
  • 1/2 cup Monterey jack cheese shredded
  • 1/2 cup Gruyere cheese shredded

Equipment

Method
 

  1. In a small bowl, combine the shredded Manchego cheese, mayonnaise, and onion powder. Mix well.
  2. In a separate bowl, combine the shredded sharp white cheddar, Monterey Jack, and Gruyere cheeses. Set aside.
  3. Spread 1 tablespoon of softened butter on one side of each slice of sourdough bread.
  4. Place two slices of bread, butter-side down, in a large skillet or on a griddle over medium heat.
  5. On the unbuttered side of one slice of bread, spread half of the Manchego cheese mixture. On the unbuttered side of the other slice, layer half of the shredded cheese blend.
  6. Place the rindless Brie cheese slices on top of the shredded cheese blend.
  7. Carefully place the bread slice with the Manchego mixture on top, butter-side up, to close the sandwich.
  8. Grill for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  9. Repeat with the remaining ingredients to make the second sandwich.
  10. Remove the sandwiches from the skillet and let them rest for 5 minutes before slicing and serving.

Notes

For an even crispier crust, you can lightly toast the bread before assembling the sandwich. Experiment with different types of bread and cheese combinations to find your favorite flavor profile.
