- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Heat a non-stick skillet over medium heat. Add the frozen cauliflower rice to the dry skillet. Cook, stirring occasionally, until most of the moisture has evaporated and the cauliflower rice is fluffy. Remove from heat and set aside.
- While the cauliflower rice is cooking, place the cottage cheese in a blender or food processor. Blend until smooth and creamy.
- In a large bowl, combine the cooked cauliflower rice, blended cottage cheese, mozzarella cheese, parmesan cheese, garlic powder, and salt. Mix well.
- Scoop about 1 tablespoon of the mixture and shape it into a tater tot form. Place each tot on the prepared baking sheet, leaving about ½ inch of space between them.
- Bake for 27-30 minutes, or until the tots are golden brown. Let them cool for a few minutes before serving.
Notes
These tots are a simple and satisfying snack option. They are best enjoyed fresh but can be stored in an airtight container in the refrigerator for a few days.
