Ingredients
  

For the Base
  • 1 large watermelon about 10-12 inches in diameter, rind removed
For the Topping
  • 1 cup Greek yogurt plain, full-fat
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries fresh or frozen, such as blueberries, raspberries, strawberries
  • 1/4 cup sliced almonds optional, for garnish
  • 1 tablespoon fresh mint leaves optional, for garnish

Method
 

  1. Cut the watermelon into a large, round disc, about 1 inch thick. This will be your pizza base.
  2. Pat the watermelon disc dry with paper towels. Place it on a large serving platter.
  3. In a small bowl, mix together the Greek yogurt, honey, and vanilla extract until smooth. This is your "sauce".
  4. Spread the yogurt mixture evenly over the watermelon base, leaving a small border.
  5. Arrange the mixed berries over the yogurt layer.
  6. Garnish with sliced almonds and fresh mint leaves, if desired.
  7. Chill the fruit pizza in the refrigerator for at least 30 minutes before serving. This helps the flavors meld and the yogurt set slightly.
  8. Slice and serve immediately.

Notes

You can customize the toppings with other fruits like kiwi, mango, or peaches. Ensure the watermelon is well-drained before adding the yogurt to prevent a watery base.
