- Make the chia pudding: In a bowl, whisk together chia seeds, almond milk, and maple syrup. Let it sit for 5 minutes, then whisk again to break up any clumps. Cover and refrigerate for at least 2 hours, or until thickened.
- Prepare the watermelon: Blend the cubed watermelon until smooth. You can strain it if you prefer a smoother consistency, but it's not necessary.
- Assemble the parfaits: In serving glasses, layer the ingredients. Start with a layer of chia pudding, followed by a layer of blended watermelon, and then a layer of mixed berries. Repeat the layers until the glasses are full.
- Serve immediately or chill for later.
Notes
You can add other fruits like mango, pineapple, or peaches to the fruit layer. A sprinkle of granola on top adds a nice crunch.
