Ingredients
  

Salad
  • 4 cups cubed watermelon seedless
  • 1 cup crumbled feta cheese
  • 1/2 cup fresh mint leaves chopped
  • 1/4 cup red onion thinly sliced
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large bowl, combine the cubed watermelon, crumbled feta cheese, chopped mint, and sliced red onion.
  2. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
  3. Pour the dressing over the watermelon mixture and gently toss to combine.
  4. Serve immediately.

Notes

For a spicier kick, add a pinch of red pepper flakes to the dressing.
