  • 6 tablespoons butter softened, divided
  • 8 slices sourdough bread
  • 4 ounces Brie cheese rind removed and sliced
For the Mayo Mixture
  • 3 tablespoons mayonnaise
  • 3 tablespoons finely shredded Manchego or Parmesan cheese
  • 1/8 teaspoon onion powder
For the Cheese Filling
  • 1/2 cup shredded sharp white cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded Gruyere cheese

Method
 

  1. Spread 3 tablespoons butter on 1 side of the bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes. Remove the bread from the skillet.
  2. In a small bowl, mix together the mayonnaise, Manchego cheese, onion powder, and the remaining 3 tablespoons of butter. In another bowl, combine the cheddar, Monterey Jack, and Gruyere cheeses.
  3. To assemble the sandwiches, place the sliced Brie cheese on the toasted side of 4 bread slices. Sprinkle the shredded cheese mixture evenly over the Brie.
  4. Top with the remaining 4 bread slices, with the toasted side facing inward. Spread the mayonnaise mixture on the outsides of each sandwich.
  5. Place the sandwiches in the same skillet. Cook until the bread is golden brown and the cheese is melted, about 5-6 minutes on each side. Serve immediately.
