Ingredients
  

For the Sandwich
  • 2 slices sourdough bread
  • 1 thin layer mayonnaise spread on top side of one slice, and outer side of the other
  • 1 thin layer Dijon mustard spread on inner side of one slice
  • 1-2 ounces grated sharp cheddar cheese depending on bread size
  • 1-2 ounces grated Gruyère or raclette cheese depending on bread size
  • enough butter for the pan

Equipment

  • Cutting board
  • nonstick skillet
  • Cast Iron Skillet

Method
 

  1. Place the bread slices on a cutting board. Spread the top side of one slice with mayonnaise. Flip the other slice and spread its other side with Dijon mustard.
  2. Layer the cheddar and Gruyère or Raclette cheeses on top of the mustard. Place the other slice of bread on top of the cheese, mayonnaise side out.
  3. Heat a nonstick or cast-iron skillet over medium-low heat. Melt enough butter in the pan to coat it. Place the sandwich in the pan, cover, and cook for 2 to 3 minutes, or until the bottom slice of bread is golden brown and crisp.
  4. Flip the sandwich, replace the lid, and cook until the other slice of bread is golden brown and the cheese is melted, 1 to 3 minutes. Reduce the heat to low if the bread is getting too brown before the cheese is fully melted.
  5. Slice and serve.

Notes

This grilled cheese can be prepped in advance. Assemble the sandwiches and refrigerate them. When ready to cook, add them directly to a preheated skillet.
